Chila is a traditional pancake from Chhattisgarh's Bastar tribal communities, made from fermented rice batter. Thin, soft and slightly sour, served with mahua honey or red ant chutney. Staple in Gond and Maria tribal diet - nutritious, easy to digest, fermentation adds probiotics. No fermentation overnight like idli - ready in 30 mins!
Tribal pantry staples for authentic taste
Base
2 cups idli rice + ½ cup urad dal (soaked & ground)
Serve
Mahua flower honey or jaggery syrup for tribal authenticity
Red ant chutney or green chili-garlic chutney
Tribal method - simple 30 minute breakfast
Grind soaked rice-urad dal to smooth pouring batter (idli consistency). Add pinch fenugreek. Ferment 6-8 hrs or overnight for sourness.
Clay or iron tawa on medium flame. Test with water drops (sizzle). Smear little oil or ghee.
Pour ladle batter, spread thin large circle. Cover 1 min. Drizzle oil edges. Cook golden both sides (2 mins each).
Stack hot chila. Serve with mahua honey drizzle + red ant chutney. Eat by hand!
