Gujarat's Famous Steamed Snack

Dhokla (Khaman Dhokla) is Gujarat's signature steamed snack made from fermented gram flour (besan) batter. Known for its soft, spongy texture and tangy flavor from curd fermentation. Tempered with mustard seeds, curry leaves, green chilies, and garnished with coriander & coconut. Healthy, low-oil, protein-rich tea-time favorite enjoyed across India!

Ingredients (Makes 20 pieces)

Besan Flour Main

Gram Flour (Besan)

1.5 cups fine besan + 2 tbsp semolina (rava)

Curd Ferment

Curd & Water

1/2 cup curd + 1 cup water (for batter consistency)

Spices Seasoning

Ginger-Chili Paste & Eno

1 tbsp ginger-green chili paste + 1.5 tsp Eno/fruit salt

Step-by-Step Recipe

Traditional Gujarati method for soft spongy dhokla

Prepare Batter

Mix besan, semolina, turmeric, sugar, salt, citric acid, ginger-chili paste. Add beaten curd + water. Whisk smooth batter (pouring consistency). Rest 30 mins for fermentation.

Steam Setup

Grease 7" plate with oil. Boil 2 cups water in steamer. Add Eno to batter (bubbles!). Pour immediately into plate.

Steam Cook

Steam on medium flame 20-25 mins till toothpick clean. Cool 10 mins. Invert on plate. Cut diamond shapes.

Tempering

Heat oil, add mustard, sesame, curry leaves, green chilies. Pour over dhokla. Garnish coriander, coconut. Serve with chutney!
