Thepla is Gujarati specialty paratha made with multi-grain flours and fresh fenugreek (methi) leaves. Spiced with chili-ginger paste, sesame seeds, and cooked with oil/ghee for golden crispiness. Ingredients (Makes 15 Theplas)

Flours Flours

Multi-Grain Flours

1 cup wheat + 1/4 cup bajra/millet/jowar + 2 tbsp besan

Fenugreek Main

Fenugreek Leaves

1 cup fresh methi leaves (chopped) + optional dill/spinach

Spices Spice Mix

Masala Paste

Chili-ginger paste, turmeric, coriander/jeera powder, sesame, curd/oil

Step-by-Step Recipe

Traditional Gujarati method - soft yet crispy

Masala Paste

Grind chili-ginger, green chilies, turmeric, coriander powder with little water to coarse paste.

Knead Dough

Mix flours, chopped methi, masala paste, curd, salt, sugar, sesame seeds, oil. Knead soft dough with water. Rest 20 mins.

Roll Theplas

Dust flour, roll into thin 6" circles. Thinner = crispier!

Cook Golden

Hot tawa, roast both sides till golden spots. Brush ghee/oil. Stack in casserole - stays soft!
