Thepla is Gujarati specialty paratha made with multi-grain flours and fresh fenugreek (methi) leaves. Spiced with chili-ginger paste, sesame seeds, and cooked with oil/ghee for golden crispiness. Nutritious multi-grain blend for authentic taste
1 cup wheat + 1/4 cup bajra/millet/jowar + 2 tbsp besan
1 cup fresh methi leaves (chopped) + optional dill/spinach
Chili-ginger paste, turmeric, coriander/jeera powder, sesame, curd/oil
Traditional Gujarati method - soft yet crispy
Grind chili-ginger, green chilies, turmeric, coriander powder with little water to coarse paste.
Mix flours, chopped methi, masala paste, curd, salt, sugar, sesame seeds, oil. Knead soft dough with water. Rest 20 mins.
Dust flour, roll into thin 6" circles. Thinner = crispier!
Hot tawa, roast both sides till golden spots. Brush ghee/oil. Stack in casserole - stays soft!
